This is a wonderful cocktail. Perfect for sipping at sundown as the fading summer light cascades across the evening sky.

Bearing little resemblance to its namesake, the Canon de 75 Modèle 1897 (a quick firing field artillery canon designed as an anti-personnel weapon system), the cocktail version delivers a refreshing, effervescent kick with a smooth almost lemonade-esque finish. Made from cognac, champagne, lemon juice and simple syrup this is one cocktail that will leave an indelible impression.

Perfect for summer parties and special occasions!


  • 1 oz Cognac or Gin
  • 2 dashes Simple Syrup
  • 1/2 oz Lemon Juice
  • 2 oz Champagne

Combine the cognac, syrup and lemon juice in a martini shaker with ice. Shake and strain into a chilled champagne glass. Top up with champers and stir gently. Garnish with lemon or orange if desired.
